3 medium size potatoes of your choice. cut into 1-1.5 inch pieces
1 roasted red pepper
3 cloves garlic - crushed or minced
oregano to taste
salt and pepper
couple of tbsp of good olive oil
That's it.
Boil the potatoes till they're tender, and drain.
Meanwhile roast your red pepper (I'm not a fan of bottled peppers. Haven't found a worthwhile brand yet.)
Peel the red pepper and cut into 1-1.5 inch pieces.
Mix everything together. adjust seasoning to taste.
Let salad sit in the fridge for a couple of hours to let the flavors meld.
Eat.
